On January 4th, St Barth welcomed the return of The Green Hearts Gala, an extraordinary evening of philanthropy, art, and haute cuisine at the prestigious Le Toiny, Relais & Châteaux.
The 2025 edition of the Green Hearts Gala benefit dinner and auction featured a Fashion Event with L’Officiel and donated works by Space Gallery artists: Isabelle Lindbergh and a special live painting by Hannah Polskin.

This year’s gala captivated its exclusive audience, raising vital funds for two intertwined causes: environmental preservation and healthcare initiatives for the island’s community. The Green Hearts Gala unfolded on January 4th at the exquisite Le Toiny, Relais & Châteaux, as one of the most anticipated philanthropic events of the season. Bringing together connoisseurs, benefactors, and visionaries, the gala celebrated its dual mission to protect The Green and support The Heart of St Barth. Guests were treated to a Michelin-starred culinary journey curated by Chef Éric Desbordes. They savored exquisite bites like crispy vegetable rolls, Comté cheese puffs, grilled chicken skewers, sesame-glazed gyozas, and panko-crusted tiger prawns with spicy sauce. The opulence continued with blinis topped with Mon Roe Caviar. For dessert, a layered lemon curd with meringue and the signature tiramisu with a cocoa cloud provided a sweet finale to this Michelin-starred feast.
The evening featured an exclusive tasting of Mon Roe Caviar, showcasing a luxurious selection sourced from the finest regions for caviar production—Bulgaria and Iran. With over 40 years of expertise and a commitment to natural, cold river farming, Mon Roe offers an unparalleled range of black caviar, celebrated as some of the finest in the world. The highlight was the Ossetra Special Reserve, a matured caviar from 14-year-old Ossetra fish, delivering a buttery, hazelnut-like taste that exemplifies true culinary excellence.

Surf is Art Immersive Exhibition and Benefit Auction
Le Toiny’s breathtaking surroundings were transformed into an immersive gallery showcasing Flags For Future, a curated exhibition of works by celebrated contemporary artists, including Jean-Charles de Castelbajac, Rachel Hayes, Julio Le Parc, Jeppe Hein, Daniel Arsham, José Parlá, and Waris Ahluwalia. Art surfboards were showcased by surfer legend Tony Caramanico and a specially conceived textile board by Coco Brun. Stunning photography by Isabelle Lindbergh was on display, along with a special design highlight: the rocking chair Signature by Seraphyn.
The benefit auction, a central highlight of the evening, presented an array of coveted works and rare items, with proceeds supporting Le Cœur de St Barth and local environmental associations dedicated to preserving St Barth’s natural beauty.

The Green Heart Gala celebrates both the natural beauty, the green, and the vibrant community, the heart, of St. Barthélemy, through the unifying cause of raising funds for cardiovascular care on the island. One of the evening’s standout moments featured a live painting on a surfboard by renowned artist Hannah Polskin. Guests marveled as the surfboard was transformed into a vibrant work of art during the gala. The completed piece was later added to the auction, captivating the audience and further contributing to the event’s charitable goals.

Another standout was the Ferrari Testa Rossa J, a remarkable 75% scale replica of the iconic 1957 Ferrari 250 Testa Rossa "Pontoon Fender." Designed to delight collectors and enthusiasts of all ages, the electric-powered model combines vintage allure with modern innovation. Meticulously crafted by Hedley Studios in collaboration with Ferrari Classiche, it features hand-formed aluminum bodywork, leather interiors, and working lights—a testament to timeless design and craftsmanship.
As the night unfolded, guests were reminded that everyone can make a difference. With 100% of profits supporting local associations in their environmental and medical missions, The Green Hearts Gala underscored the profound impact of community and philanthropy.
